Taco Soup

So the weather is unfortunately starting to change here. Although I do love how green everything is right now and how all the leaves are changing colors, the air is starting to be very crisp and a little cold. When that happens I love to make my taco soup and warm up on the couch with it. One thing I love about it is that you can make it in the crockpot and then come home to it ready to eat. Also it freezes really well so you can double or triple the recipe and freeze it in either individual servings or large servings. 1 lb ground beef
1 can sweet corn
1 can diced tomatoes with lime and cilantro
1 can diced green chillies
3 fresh, chopped jalapeno pepper
1 package taco seasoning


In skillet brown the ground beef and add taco seasoning when finished

In a deep sauce pan or crockpot mix together corn, tomatoes, chillies, and peppers, add one corn can of water and bring to aboil. Once boiling add the ground meat and simmer for 5 minutes on low heat. When serving top with fresh grated cheese, fresh avocados, sour cream, and lime flavored tortilla chips.
